This year only one of my kids will be able to be with us. The Navy still has one of them and two others are being claimed by in-laws. I knew that would be an uncomfortable meal for just the three of us, so I accepted an invitation for us to join my in-laws. For the first time since I've been married, I'm not preparing a Thanksgiving meal. But the dinner we are attending is carry-in. So I am attempting another first- apple pie.
I have never made an apple pie (I know, right?) Hard to believe after 30 years of marriage that I've never made this basic, all-American, dessert. But remember, I raised a crew of good eaters. So when I cook a fruit dessert, I make. a. cobbler. In a big pan.
This evening I'll be looking at apple pie recipes. When I get up in the morning (which won't be before sunrise to stick a big bird in the oven and peel potatoes) I'll relax over my coffee, smell my pie baking and maybe indulge in another first- watching the entire Thanksgiving Day parade without interruption! Woo Hoo!
I have so much to be thankful for, too much to list. I truly hope you have a blessed Thanksgiving!

Oh, my goodness! Your post gave me such a happy childhood memory of my mom's apple pie. We were a family of 9. She baked her apple pie in the big square roasting pan that came with her oven when she and Dad bought it. She never made a bottom crust, just a top one with a nice big hand-fluted edge. That's a happy memory. :-) Happy Thanksgiving!
Now that's a neat way to improvise. Happy Thanksgiving to you!
