I don't think I had a chance to meet the bride on this trip but I will never forget the awe I felt when I saw her at the ceremony. She was so beautiful and I was at just the right age to see the whole experience as a fairy tale. So whenever anyone spoke her name, in my mind there was always the word "princess" before it.
I have had the chance to visit with her as a grown-up (but I've never told her about the high place she had in my little girl imagination so many years ago.) A few weeks ago she sent me a recipe for Ham and Cheese Quiche and I am making it right now. I'm doubling it because DH will be here this weekend and if he reads my blog before he comes home....
Here is the recipe:
HAM AND CHEESE QUICHE
one 9" deep dish pie shell
2 cups shredded sharp cheese
1 cup chopped ham
1/4 cup onion, finely chopped
2 eggs, beaten
1/2 cup mayonnaise
1/2 cup evaporated milk
Preheat oven to 375 degrees. Toss together cheese,
ham, and onion. Spoon into pie shell. Wisk together remaining ingredients until well blended. Pour over ham and cheese mixture. Bake 45 minutes or until golden.
