Family Reunion

 I had such a wonderful weekend connecting with some far away relatives and some who are close but fall into the "too busy to see much" category. Both kinds are missed and on my mind a lot. It was great to get to visit with them all. Of course, the time was too short and now we are back to the hectic everyday pace of living but I have some nice memories to tide me over til the next time we meet.
Say "cheese"


 We met up at a local park for a picnic lunch. And I brought along the cake I mentioned in my last post. I thought I had royally messed it up because I accidentally purchased coconut milk instead of cream of coconut. But I improvised and it turned out yummy so I'm sharing it with you. It's your typical "cake mix fix" poke cake and I honestly can't remember where I got the recipe but I changed it so much I will call it mine until someone comes along to correct me.

    Tropical Cake


Ingredients-
Yellow Cake mix
Eggs and Oil called for on box
1 can Coconut milk refrigerated
1/2 Cup shredded coconut
Small can crushed pineapple, lightly drained
Small container whipped topping
3 Tablespoons toasted shredded coconut
Maraschino cherries

To prepare -
Combine cake mix, eggs, and oil. Scrape off the solid part of the coconut milk and reserve. Measure the liqid part of the coconut milk and add water to equal the amount of water called for on the cake mix. Mix according to package directions then stir in the shredded coconut. Place in 9x13 greased and floured cake pan and bake according to package directions. After cake is cooled, poke holes in the top of it with a fork. Combine crushed pineapple and the reserved coconut milk. Spread over top of cake. Spoon whipped topping over that. Then sprinkle toasted coconut over the top.

Just before serving, scatter cherries over the top. It was a hit! I think? I've got one of those great families that will tell you something is "the best ever" even if it's not so great. But DH went back for seconds so I'm calling it a success!
