Yesterday evening most of the kids gathered here to celebrate DH's birthday. Seldom do we get all of them together at the same time because of work schedules. This is one of those weeks when it just couldn't happen so we planned 2 celebrations. Later in the week we will have a fun day and yesterday was an at home party. DH is THE grill master of the place so we let him have the honor of grilling up some wonderful grub before the cake and ice cream made it's appearance. We had the usual hamburgers, hot dogs, bratwurst, and chicken breasts. Instead of a store bought boring chicken marinade, I whipped up a homemade one that really rocked. Here is the recipe to the best of my remembering.
Remember the roasted garlic I showed y'all a couple weeks or so ago? Well, take a heaping tablespoon of that mixture and mash it with a fork to get the garlic all mushy and the olive oil soft. Put it in a bowl with 1/2 cup of vinegar, juice of 2 limes, and a tablespoon of cumin powder. Stir really well, then add salt and pepper to taste. Pour over 2 lbs boneless, skinless chicken breast in gallon bag. Marinate overnight, turning occasionally to coat chicken with marinade. Grill as you normally would. Take the compliments modestly!
As I type this, DH is putting together the goat pen (Ha! I made it sound so easy, like: "only some assembly required!") Technically, the pen is up. It just isn't finished. I can look out the window and see a goat pen. But if a goat were in it, it would be knocked down in no time. So in reality, DH is working really, really hard to finish the goat pen. For me. I think deep down, he doesn't mind the idea of being married to a "goat lady." Or maybe it was the cake and ice cream. Hmmm
