Salmon was on sale at our Wal Mart last week! I have been trying to get more fish in our diets so this was great news. But cooking it is a challenge to me, it's not something I have made at home much so it's a new adventure. I Googled salmon recipes and found one that sounded good on oregonsalmon.org. It had a Santa Fe style sauce that could be baked, grilled, or sauteed. So that was our main dish for dinner last night. Here is a picture of the sauce before I put it on the salmon pieces:
It contains salsa, mayo, lime juice and zest, garlic, and cilantro. I basted the salmon pieces and then used the baking method. Here is the finished dish:
For a side dish I fixed some quinoa with spinach. And the grand finale was a loaf of chocolate chip banana bread made from some bananas that would have been compost if they had stayed in the fruit basket one more day and dark chocolate chips (antioxidants!)
All that was to treat my DH for the work he did in my chicken coop-new nesting boxes! We went from unstable little plastic boxes from the Dollar General store to a nice one piece set-up from Rural King. Hen Heaven!
